How to make it

  • Toss potatoes with 1 T oil in a bowl. Cover with plasstic wrap. Microwave till edges start to soften, about 4--7 min, shake bowl 1/2 way thru.
  • Pat chicken dry, season with salt and pepper. Heat remaining oil till smoking . brown chicken until golden and done. put on plate, tent with foil.
  • Add potatoes to skillet, cook till golden , about 5 min. Stir in artichokes, heat thru, Add garlic, lemon zest, juice, and oregano.
  • Cook until fragrant, 30 sec or so.
  • Put over chicken and serve!.
