Lemon Chicken With Artichoke Hearts And Potatoes

- 1 lb small red potatoes, quartered shopping list
- 2 T oil, divided shopping list
- 4 boneless, skinless chicken breasts shopping list
- salt and pepper shopping list
- 1 (9 oz ) box frozen artichokes, thawed shopping list
- 4 garlic cloves, minced shopping list
- 1 t grated zest and 1 T juice from a lemon shopping list
- 2 T chopped fresh oregano shopping list
How to make it
- Toss potatoes with 1 T oil in a bowl. Cover with plasstic wrap. Microwave till edges start to soften, about 4--7 min, shake bowl 1/2 way thru.
- Pat chicken dry, season with salt and pepper. Heat remaining oil till smoking . brown chicken until golden and done. put on plate, tent with foil.
- Add potatoes to skillet, cook till golden , about 5 min. Stir in artichokes, heat thru, Add garlic, lemon zest, juice, and oregano.
- Cook until fragrant, 30 sec or so.
- Put over chicken and serve!.
