How to make it

  • In a medium bowl, combine the dry ingredients. Stir in the sourdough starter. When it's too stiff to easily stir, work the ingredients together with your very clean hands.
  • Depending on the thickness of your sourdough starter, you may need to add some water to get your dough to the right, smooth consistency (see photo). Add the water a very little at a time, kneading well. Then add the olive oil and knead for about 3 or 4 minutes to work the oil into the dough. You can knead it in the bowl, on a clean countertop, or just pick the dough up and knead it in your hands.
  • Divide the dough in half and place in 2 lightly oiled bowls (you can use a spray oil such as Pam). Cover the bowls with plastic wrap and allow to sit at room temperature until doubled in size, about 2 to 4 hours depending on the temperature in your kitchen.
  • Preheat your oven to 500-degrees, or your oven's highest baking temperature. Preheat your baking/pizza stone with the oven. You want both the pizza stone and oven nice and hot.
  • Flour your clean countertop and, with a rolling pin, roll the dough into a 12-inch circle. Let the dough rest on your countertop for about 30 minutes while your oven and stone are getting as hot as possible.
  • Rub a pizza peel well with flour then sprinkle with cornmeal. Move the pizza dough to the prepared peel. (If you don't own a wooden pizza peel, use the bottom of a large, round pizza pan you've covered with parchment paper.) Lightly spray the dough with olive oil spray, then poke the dough all over with a fork.
  • Spread a thin layer of pizza sauce and add your favorite toppings. Carefully slide it onto the hot pizza stone in your oven. Bake for 5-8 minutes until done. The baking time depends on your own oven, so keep a close eye on it.
  • NOTES

  • The photos I've posted are from a pizza party I did with my grandkids. My 5 year old granddaughter rolled out the dough and did all the toppings and was extremely proud of the delicious pizzas she made for everyone. Cooking with your kids (and grandkids) is a great way to share quality time. It instills in them a love of cooking and boosts their self-esteem.
