Chocolate Peanut Toffee

- 4 sticks butter, cut into pieces shopping list
- 2 Cup sugar shopping list
- 1/4 Teaspoon salt shopping list
- 4 cups whole cocktail peanuts shopping list
- 1 Cup cocktail peanuts, chopped shopping list
- 8 Ounce 70% cacao bittersweet chocolate, finely chopped shopping list
How to make it
- Butter a 15 x 10 x 1 inch baking pan and put on a heatproof surface.
- Bring butter, sugar, and salt to a boil in a 4 - 5 quart heavy sauce pan over medium high heat, whisking until smooth. Bring to boil, stirring occasionally, until mixture is a deep golden and registers 300 degrees on a candy thermometer (hardball stage), about 15 - 20 minutes. Immediately stir in the whole peanuts, then carefully pour hot toffee into center of baking pan. Spread with spatula, smoothing top, and let stand 1 minute, then immediately sprinkle chocolate on top.
- Let stand until chocolate is melted, 4 - 5 minutes, then spread over toffee with clean spatula. Sprinkle with chopped peanuts, then freeze until chocolate is firm, about 30 minutes. Break into pieces.
