Divine Egg Custard Pie

- 1 unbaked 9 inch pie shell shopping list
- 1 tablespoon unsalted butter shopping list
- 2/3 cup granulated sugar shopping list
- 1/4 teaspoon salt shopping list
- 4 eggs shopping list
- 2 teaspoons good quality pure vanilla extract shopping list
- 2 cups Half and Half or 1 cup milk, 1 cup whipping cream shopping list
- nutmeg to sprinkle shopping list
How to make it
- In bowl, with mixer, cream butter, sugar, salt
- Add 1 egg at a time, beating to combine well after each addition
- Add Half and Half, vanilla, stirring on low until mixed
- Pour slowly into pie shell
- Sprinkle with nutmeg
- I place aluminum foil strips around the edge of crust to keep from browning too much
- Place in a 375 degree oven for 35-40 minutes
- Since ovens vary, remove when the pie is still a little jiggly in the middle
- Place on wire rack to cool, remove foil strips, let cool for 1 hour
- *I make my own pastry, but in a pinch, Marie Callender's Frozen Pie Crust is delicious with this recipe.
