How to make it

  • In bowl, with mixer, cream butter, sugar, salt
  • Add 1 egg at a time, beating to combine well after each addition
  • Add Half and Half, vanilla, stirring on low until mixed
  • Pour slowly into pie shell
  • Sprinkle with nutmeg
  • I place aluminum foil strips around the edge of crust to keep from browning too much
  • Place in a 375 degree oven for 35-40 minutes
  • Since ovens vary, remove when the pie is still a little jiggly in the middle
  • Place on wire rack to cool, remove foil strips, let cool for 1 hour
  • *I make my own pastry, but in a pinch, Marie Callender's Frozen Pie Crust is delicious with this recipe.

    I can't wait to try this recipe. It sounds delicious. My dad used to love a coconut custard pie. I was wondering if you have ever added flaked coconut to the cream with a lttle sprinkled on top to bake? Would you let me know. Thanks. Lorraine
