How to make it

  • heat a large flat skillet
  • beat the eggs, milk, green onion, and parmesan cheese (and some spices)
  • make 3-4 very thin frittatas - one at a time
  • lay out flat to cool
  • mix the ricotta, cottage, and shredded cheeses together
  • add shredded zucchini, (and other veggies) spinach, garlic, and spices to the cheese mixture
  • heat the mixture on the stove top for 10-15 minutes to thicken it and so it spends less time in the oven (since the eggs are already done)
  • let it cool and thicken
  • spread the mixture on each frittata one at a time and roll each one up
  • place in a baking dish seam side down
  • add some shredded cheese on top
  • bake at 350 for 30 minutes
  • let cool about 5 minutes before serving so it has time to set
  • you could also put this whole thing together and let sit in the refrigerator for a day or so. I make mine in the afternoon for a quick dinner.

    You can also stuff the frittatas with rice or any filling you would use in lasagna. Play around with it and don't be a slave to any of my ingredients, they are all merely suggestions.
    By the way, the picture is before the cheese was added and before they were baked.
