Frittata Rollups

- 8 eggs shopping list
- 1/4 cup milk shopping list
- 1 green onion, chopped shopping list
- 1/4 cup parmesan cheese shopping list
- 1/4 cup ricotta cheese shopping list
- 1/4 cup cottage cheese shopping list
- 2 cups shredded cheese shopping list
- 1 large zucchini, shredded and drained VERY well shopping list
- (any other veggies you'd like to add, just shred or chop finely) shopping list
- 1 handful of spinach shopping list
- garlic (add as much or as little as you like) shopping list
- spices, salt, pepper, whatever sounds good to you shopping list
How to make it
- heat a large flat skillet
- beat the eggs, milk, green onion, and parmesan cheese (and some spices)
- make 3-4 very thin frittatas - one at a time
- lay out flat to cool
- mix the ricotta, cottage, and shredded cheeses together
- add shredded zucchini, (and other veggies) spinach, garlic, and spices to the cheese mixture
- heat the mixture on the stove top for 10-15 minutes to thicken it and so it spends less time in the oven (since the eggs are already done)
- let it cool and thicken
- spread the mixture on each frittata one at a time and roll each one up
- place in a baking dish seam side down
- add some shredded cheese on top
- bake at 350 for 30 minutes
- let cool about 5 minutes before serving so it has time to set
- you could also put this whole thing together and let sit in the refrigerator for a day or so. I make mine in the afternoon for a quick dinner.
