I found several Squash Casserole Dishes and then simplified and made this. The family loves it! Hope you enjoy!

Ingredients
  • 7 or 8 small yellow squash
  • 2 eggs
  • 1 1/2 cups grated chedder cheese, I use Sharp
  • 1/4 c. milk
  • 1 small onion, chopped, I use Vidalia or sweet onion
  • 3 TBS Splenda or sugar if you prefer
  • 1/2 stick of Butter, cut into slices
  • 1 sleeve of Wheat Ritz Crackers or some other buttery type of cracker, crushed

Directions
  1. Slice the squash and parboil about 10-15 minutes, drain
  2. Add 2 beaten eggs
  3. milk, onion, splenda and butter
  4. Pour into a casserole dish, top with cheese and then add the crushed crackers.
  5. Oven at 350 for about 25 minutes
