Squash Casserole

- 7 or 8 small yellow squash shopping list
- 2 eggs shopping list
- 1 1/2 cups grated chedder cheese, I use Sharp shopping list
- 1/4 c. milk shopping list
- 1 small onion, chopped, I use Vidalia or sweet onion shopping list
- 3 TBS Splenda or sugar if you prefer shopping list
- 1/2 stick of butter, cut into slices shopping list
- 1 sleeve of Wheat Ritz crackers or some other buttery type of cracker, crushed shopping list
How to make it
- Slice the squash and parboil about 10-15 minutes, drain
- Add 2 beaten eggs
- milk, onion, splenda and butter
- Pour into a casserole dish, top with cheese and then add the crushed crackers.
- Oven at 350 for about 25 minutes
