Zuchinni Gondolas

- 5 or 6 good size zuchinnis (fatter the better) shopping list
- 1 lb ground beef shopping list
- 2 or 3 cloves of garlic, minced shopping list
- 4- 6 oz of diced mushrooms shopping list
- 1 chopped green pepper shopping list
- 1/2 onion, chopped shopping list
- salt & pepper shopping list
- italian seasoning to taste( OldGringo's on this site is BEST) shopping list
- 1 or 2 chopped tomatoes(Roma best) shopping list
- 2 tbsp tomato paste shopping list
- 1 cup shredded cheese shopping list
How to make it
- Slice zuchinnis in half lengthwise
- Using a melon scoop, remove most of the pulp, to form gondolas
- Arrange in a large pan or casserole dish
- Set aside
- Stir fry at high heat the beef, mushrooms, garlic, onions, green pepper until brown (4 minutes)
- Remove from heat and add salt, pepper and Italian seasoning, tomatoes, 1/2 cup water, tomato paste
- Return to heat and simmer until thickened (2-3 minutes)
- Put 1/4 " of water in pan or casserole dish with 2 tbspns of oil
- Spoon filling into gondolas
- Cover with foil
- Bake 25-30 minutes
- Remove foil and sprinkle cheese on top of gondolas
- Return to oven until cheese is melted (about 5 minutes)
