How to make it

  • Slice zuchinnis in half lengthwise
  • Using a melon scoop, remove most of the pulp, to form gondolas
  • Arrange in a large pan or casserole dish
  • Set aside
  • Stir fry at high heat the beef, mushrooms, garlic, onions, green pepper until brown (4 minutes)
  • Remove from heat and add salt, pepper and Italian seasoning, tomatoes, 1/2 cup water, tomato paste
  • Return to heat and simmer until thickened (2-3 minutes)
  • Put 1/4 " of water in pan or casserole dish with 2 tbspns of oil
  • Spoon filling into gondolas
  • Cover with foil
  • Bake 25-30 minutes
  • Remove foil and sprinkle cheese on top of gondolas
  • Return to oven until cheese is melted (about 5 minutes)

    In your directions, you don't mention filling the gondolas, but I'm guessing you do that before baking, right?
