How to make it

  • Sort and rinse beans, then soak overnight in water.
  • Drain beans and place in crockpot.
  • Add vegetable juice, wine, soy sauce, and apple or pineapple juice.
  • Cover with vegetable stock or water; the amount added depends on whether you prefer a soup (more liquid) or a stew (less).
  • Cook at high for 2 hours.
  • Add vegetables, herbs, and spices, and cook for 5-6 hours at low until carrots and parsnips are tender.
  • When tender, add rice or pasta and cook for one additional hour.

    made this for dinner last night in my thermomix. i used tinned beans (kidney and cannellini) i also used frozen brown rice that i had left over in the freezer. i used up almost all the organic veg that i had in my fridge ready for the next box delivery making the 2 cups of veg juice (a tomato, a zucchini, half a parsnp, half a carrot, half a bunch of celery and half a green pepper) i forgot to add the parsley and as the beans were already cooked and the rice was already cooked, i had this ready in less than an hour and it tasted great!!! so chuffed to have found this recipe. thanks
