- 1 package defrosted chopped spinach shopping list
- 1 ½ c. 1% cottage cheese shopping list
- 1/3 c. shredded mozzarella cheese shopping list
- 1/3 c. shredded Italian cheese shopping list
- ¼ c. shredded parmesean cheese shopping list
- 4 jumbo eggs (or 5 reg size eggs) shopping list
- ½ c. Italian bread crumbs (enough to soak up most of the moisture) shopping list
- 2 medium sweet apples, grated shopping list
- ¼ Tsp salt shopping list
- ¼ tsp pepper shopping list
- ¼ c. whole wheat panko bread crumps shopping list
- 2 tsp olive oil shopping list
How to make it
- Preheat oven to 375.
- Crack & whisk eggs into large bowl. Add Rest of the ingredients & mix thoroughly.
- Spray a medium sized casserole dish (deep dish if you have it) with vegetable spray and spread mixture out evenly – not pressing down to hard. Sprinkle top with panko bread crumps and drizzle lightly with olive oil.
- Bake for 50-60 mins until edges are golden brown and a knife comes out of center dry.
