How to make it

  • 1) Add celery to pan with the garlic, thyme, parsley, and bay leaf and saute for 1 min. Deglaze with wine and continue to cook until reduced by half.
  • 2) Add beef stock and tomatoes to pan and lower temp and simmer until almost boiling.
  • 3)Add mushrooms to sauce and simmer 5 min.
  • 4)Add basic rue and make sure it's smooth ( no lumps). Now mix in salt, pepper, and cream well just before serving.
  • -at this point the sauce is done and you can put it over just about any meat you want.
