Langostino Fra Diavolo

- 8 ounces tagliatelle or linguine pasta, cooked according to package directions shopping list
- 2 tablespoons extra virgin olive oil, divided shopping list
- 2 tablespoons minced garlic, divided shopping list
- 1 pound langostino or shrimp, deveined shopping list
- 1 large onion, finely diced shopping list
- 1 teaspoon chopped fresh basil shopping list
- 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried) shopping list
- 1 teaspoon crushed red pepper flakes shopping list
- 2 tablespoons tomato paste shopping list
- 1/4 cup white wine shopping list
- 1 (28-ounce) can crushed tomatoes shopping list
- salt and freshly ground pepper, to taste shopping list
How to make it
- Heat 1 tablespoon oil in a large non-stick skillet. Add 1 tablespoon garlic and the langostino, saute until the langostino are pink and just cooked. Remove from pan and set aside.
- Add the remaining oil to the pan; add the onions and saute for 5 minutes, or until the onions are soft. Add the remaining garlic, basil, oregano and red pepper flakes, saute 2 minutes. Add the tomato paste and wine, cook until reduced by half. Add the crushed tomatoes and cook 5 minutes, or until slightly thickened. Add the langostino and simmer until heated through. Serve over pasta.
