How to make it

  • Chop and mix all the veggies, herbs and spices in a big mixing bowl. If you're using raw artichokes, you might need to cook them a bit to get them tender first.
  • Preheat oven to 400 F
  • She had garlic puree to spread over the bagels, but I didn't have any so I used olive oil margarine, then spread the veggie mixture evenly over the bagels.
  • Sprinkle shredded mozzarella evenly over bagels, then pamesano-romano, and a little parsley for color.
  • Bake bagels in 400 F oven for about 10-15 minutes or until cheese is melted. Once you have everything chopped, it's really quick and easy. Please see the photos I attached above of both hers and mine. Enjoy!
