How to make it

  • in a bowl coat tomatoes with olive oil and salt and pepper
  • cook on cookie sheet in 400 dgree oven for 30 minutes, shaking the pan about every 10 minutes
  • cook rice to package directions (using chicken broth not water), along with garlic. Remove garlic before adding next ingred
  • When rice is down add onions , tomatoes and cheese
  • salt and freshly ground black pepper
  • enjoy
  • if your rice is a bit sticky add a few splashes of high quality olive oil
