How to make it

  • 1. Break up the sausage into a soup kettle and cook with the chopped onions over medium heat, continuing to break up the meat with a spatula. Cook until meat is no longer pink and onions are tender.
  • 2. Add in the beans and spinach, and further simmer until spinach is completely thawed and stirred into the soup.
  • 3. Now add the diced potato and some water if needed. Bring up to a simmer again and cook for another 15 minutes or so. Season as desired and serve.
  • SUGGESTED SIDES: Cornbread, dinner rolls, or crusty French bread.

    We're finishing up the last of it today, Maureen... It's so damn good, and really good for ya. Wouldn't be bad with piping hot cornbread, either!!
