How to make it

  • Slice the zucchini on the mandolin into thin slices. (DO NOT USE THE JULIENNE BLADE - VERY IMPORTANT)
  • Assemble & serve:
  • If doing this with grandma on someone else new to raw food diet disregard the following stack order & make her feel special by asking for her advice
  • First put down a bit of sauce & spread it around
  • Put down a layer of zucchini making sure they overlap
  • Put a layer of "ricotta cheese"
  • Put down a bit of sauce right on top of the ricotta
  • Put down a layer of zucchini this time crosswise to the previous layer of zucchini again making sure they overlap
  • Repeat from put a layer of "ricotta cheese" until you reach desired height
  • Top with one more layer of sauce.
  • Sprinkle on some Raw Vegan Garlic Parmesan Cheese
