How to make it

  • In a large saucepan, bring 6 cups of water to a boil. Add 1 teaspoon salt. Add soybeans (edamame) and boil for 5 minutes. Drain thoroughly and move to a salad bowl. Let cool.
  • Chop all veggies, parsley and basil. Add to edamame.
  • Combine vinegar, olive oil, Italian seasoning and garlic. Mix well or shake in a glass jar until thoroughly mixed. Toss with salad. Taste and adjust with salt and pepper.

    I make this, or a variation on it, all Summer long. So tasty and healthy. Works best with a vinaigrette dressing

    Oh my,my...how did I miss this one.
    I really like Edamame's very much,and your salad looks lovely,healthy,and down right good.
    It is difficult to get Edamane here any more,but when I get to a larger city I will certainly remember your recipe and try to retrieve some.
