Chorizo, Potato And Pea Tortilla

- 500 baby potatoes, PEELED shopping list
- 3-4 chorizo sausageS, SLICED shopping list
- 1 onion, SLICED shopping list
- 15 ML garlic paste shopping list
- 250 ML frozen peas shopping list
- 80 ML parsley, FINELY CHOPPED shopping list
- salt & ground pepper TO TASTE shopping list
- 6 extra large eggs, BEATEN shopping list
How to make it
- PRE-HEAT OVEN GRILL
- COOK POTATOES UNTIL JUST SOFT BUT STILL FIRM AND HALVE THEM.
- HEAT A GLUG OF OIL IN AN OVENPROOF PAN (LIKE A SKILLET) AN FRY ONIONS AND CHORIZO FOR 5 MINUTES.
- ADD PASTE AND COOK FOR ANOTHER MINUTE
- TOSS THROUGH POTATOES, PEAS AND PARSLEY AND POUR OVER EGGS
- COOK, STIRRING UNTIL EGGS BEGIN TO SET
- PLACE TORILLA IN OVEN AND GRILL UNTIL GOLDEN AND SET
- REMOVE AND ALLOW TO COOL
- SERVE SLICED INTO WEDGE AT ROOM TEMPTERATURE
- NG: IF YOU CAN'T FIND CHORIZO SAUSAGES I THINK RUSSIONS OR ANY OTHER SPICY SAUSAGE IS A GOOD REPLACEMENT.
- NB: OBMIT THE SAUSAGES FOR BUTTERNUT IT IS SUPER DUPER :)
