Carrot And Parsnip Latke's

This recipe was another one put together with ingredients that I 'gave' to Keni, and they came together in the most amazing way. The dish was sweet, crispy and absolutely delicious.
Ingredients
- 4 parsnips, grated shopping list
- 1 carrot, grated shopping list
- 2 Tbs flour shopping list
- 1 shallot, minced shopping list
- 1 egg (2 may be needed…I only had 1 left) shopping list
- 1 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 Tbs parsley shopping list
- oil, for frying shopping list
- Sauce: shopping list
- 4 Tbs goats cheese shopping list
- 2 tsp balsamic vinegar shopping list
- 1 tsp butter shopping list
- 1/2 tsp olive oil shopping list
- 1 tsp pepper shopping list
How to make it
- Mix all ingredients together, and form small patties
- Heat oil in a pan (1/4" deep oil)
- Carefully place each patty in the oil, and fry until golden brown, and flip over
- Sauce, combine ingredients and melt in a pan over low heat. Serve warm on top of each patty.
