Chorizo Spinach Pasta

- 4 links of chorizo sausage casings removed shopping list
- 2 cloves minced garlic shopping list
- 1 pound of fresh spinach or 1 package of thawed frozen spinach with the water pressed out shopping list
- 1 cup whipping cream (half and half will do) shopping list
- salt and pepper shopping list
- 1 pound of penne pasta shopping list
- 1/2 cup parmesan cheese shopping list
How to make it
- Set a pot of water to boil for pasta. Cook pasta 1 minute short of package directions
- Crumble and cook chorizo sausage in a large deep skillet until cooked through. I usually remove some of the fat if there is a lot.
- Add garlic, cook for 60 seconds
- Add spinach in batches adding more as it wilts. If using frozen spinach be sure to remove as much water as possible (squeezing between 2 plates is very effective).
- Once spinach is wilted stir in whipping cream
- Add salt and pepper to taste (I do not add salt since the sausage is salty)
- Let simmer 5 minutes
- Add the cooked pasta. Cook for a few more minutes to finish the pasta.
- Stir in Parmesan cheese.
