How to make it

  • Set a pot of water to boil for pasta. Cook pasta 1 minute short of package directions
  • Crumble and cook chorizo sausage in a large deep skillet until cooked through. I usually remove some of the fat if there is a lot.
  • Add garlic, cook for 60 seconds
  • Add spinach in batches adding more as it wilts. If using frozen spinach be sure to remove as much water as possible (squeezing between 2 plates is very effective).
  • Once spinach is wilted stir in whipping cream
  • Add salt and pepper to taste (I do not add salt since the sausage is salty)
  • Let simmer 5 minutes
  • Add the cooked pasta. Cook for a few more minutes to finish the pasta.
  • Stir in Parmesan cheese.
