- 1 ½ c. white sugar or (use some honey equal to sub shopping list
- 1/4 c. salt shopping list
- 2 ½ T. black pepper shopping list
- 3 T. paprika or use smoked paprika shopping list
- 1 tsp. cayenne pepper shopping list
- 2 T. garlic granular shopping list
- 1/2 c. onion chopped shopping list
- 4 c. ketchup shopping list
- 2 to 4 T. apple cider vinegar or to UR taste shopping list
- 3 c. hot water shopping list
- 4 T. brown sugar shopping list
- pinch cayenne pepper shopping list
- salt ñ pepper to taste shopping list
- 1 c. soaked favorite wood chips shopping list
How to make it
- Trim away any excess fat from ribs. Medium bowl- stir together sugar- salt- black pepper- paprika- 1 teaspoon cayenne pepper and garlic Rub spice mix all over ribs. Place ribs in 2) 10x15 “ roasting pans- piling two racks of ribs per pan. Cover and refrigerate 8 or more hours.
- Preheat oven 275° F Bake uncovered 3-4 hours, or until ribs are tender or just about falling apart.
- BBQ sauce~ remove 4-5 tablespoons drippings from roasting pans- place in skillet - medium heat.
- Cook onion in pan drippings until lightly browned. Stir in ketchup and apple vinegar- heat 3 to 4 more minutes- stirring constantly.
- Mix in water - brown sugar- season to taste with cayenne pepper- salt and pepper. Reduce heat to low- cover- simmer 1 hour-adding water if it gets too thick.
- Preheat grill for low heat. When grill is ready- add soaked wood chips to coals or to the smoker box of a gas grill. Spray grill's grate with a coat of cooking spray.
- Place ribs on grill but do not overcrowd. Cook 20 minutes- turning occasionally. Baste ribs with sauce during t last 10 minutes of grilling only.
