How to make it

  • Trim away any excess fat from ribs. Medium bowl- stir together sugar- salt- black pepper- paprika- 1 teaspoon cayenne pepper and garlic Rub spice mix all over ribs. Place ribs in 2) 10x15 “ roasting pans- piling two racks of ribs per pan. Cover and refrigerate 8 or more hours.
  • Preheat oven 275° F Bake uncovered 3-4 hours, or until ribs are tender or just about falling apart.
  • BBQ sauce~ remove 4-5 tablespoons drippings from roasting pans- place in skillet - medium heat.
  • Cook onion in pan drippings until lightly browned. Stir in ketchup and apple vinegar- heat 3 to 4 more minutes- stirring constantly.
  • Mix in water - brown sugar- season to taste with cayenne pepper- salt and pepper. Reduce heat to low- cover- simmer 1 hour-adding water if it gets too thick.
  • Preheat grill for low heat. When grill is ready- add soaked wood chips to coals or to the smoker box of a gas grill. Spray grill's grate with a coat of cooking spray.
  • Place ribs on grill but do not overcrowd. Cook 20 minutes- turning occasionally. Baste ribs with sauce during t last 10 minutes of grilling only.
