Zingy Jam - Granola Oaties

- 1/2 cup flour shopping list
- 1/2 cup spelt flour shopping list
- 1 1/4 cups rolled oats shopping list
- 1/2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp cinnamon shopping list
- 1/2 tsp Chinese 5-Spice shopping list
- 3 tbsp softened butter shopping list
- 2 1/2 tbsp shortening shopping list
- 1/3 cup sugar shopping list
- 1/3 cup packed brown sugar shopping list
- 1 large egg shopping list
- 1 tsp vanilla shopping list
- 1 tsp orange extract shopping list
- 1 tbsp fresh-grated ginger shopping list
- 1/3 cup grape jam shopping list
- 3/4 cup raisins shopping list
- 1/2 cup diced, dried apricots shopping list
- 2 pkg (4 bars) Nature Valley "Oats 'n Dark Chocolate" Crunchy Granola Bars, coarsley crushed shopping list
How to make it
- Preheat oven to 350°F and line three cookie sheets with parchment or silicone.
- In a medium bowl, whisk together flours, oats, baking powder, baking soda, salt, cinnamon and 5-spice See Photo. Set aside.
- In another bowl, beat together the butter, shortening and sugars.
- Add egg, vanilla, orange extract and ginger, beating until smooth.
- Add the flour mixture to the creamed mixture and mix until almost combined.
- Add the jam, raisins, apricots and granola bar pieces and fold in. See Photo
- Drop generously portioned scoops of batter 1 1/2 - 2” apart. See Photo
- Bake for 15 minutes.
- Cool completely on the sheets for crispy cookies, or transfer to racks after 5 minutes for slightly chewier ones.
