Minted Melon Salad

- about 6 cups fresh melon pieces(probably about 1 cantaloupe and 1 honey dew, or half a watermelon and 1 other melon or 1 personal watermelon and another honeydew or cantaloupe...:) shopping list
- 2 cups grapes(I used the large red grapes...not seedless. We just eat 'em whole, seeds and all, anyway ;) shopping list
For Dressing
- juice from 3 fresh limes(about 2 1/2-3T) shopping list
- 1/4 cup honey shopping list
- 1t vanilla shopping list
- 1t kosher or sea salt shopping list
- about 5 medium/large fresh mint leaves, chopped shopping list
How to make it
- Place fruit in large bowl and sprinkle with salt. Toss and let rest while preparing dressing.
For Dressing
- Whisk together lime juice, honey and vanilla until well combined.
- add about 1 1/2T fresh mint leaves to dressing
- Pour over fruit and toss, again, to coat.
- Refrigerate at least 1 hour, if possible to chill and let flavors meld.
- Add additional fresh mint just before serving, if desired.
- Can also be served in the halves of the melons, used! :)
