Chocolate Dipped Coconut Macaroons

- 8 ounces flaked ,sweetened coconut,(1 package)toasted shopping list
- 1 cup sugar shopping list
- 4 large egg whites shopping list
- 1 1/2 teaspoon vanilla extract shopping list
- 1/2 teaspoon almond extract shopping list
- 6 ounces (6 squares) melted semi-sweet chocolate shopping list
- 3/4 cup toasted, chopped almonds shopping list
How to make it
- pre-heat oven to 325 degrees
- line 2 large cookie sheets with parchment paper
- spray with non stick cooking spray
- in large mixing bowl , mix egg whites , sugar, almond and vanilla extracts.
- Stir in toasted coconut
- drop batter by rounded teaspoons about an inch apart
- bake till set and golden,rotating pans between top and bottom racks
- about 25 minutes
- cool about 1 minute on cookie sheets, then transfer to wire racks
- cool completley
- melt chocolate slowly in double boiler
- dip 1/2 of each cookie in chocolate ,then sprinkle with almonds
- let chocolate set completley
- (to toast coconut or almonds : preheat oven to 350 spread coconut or almond on cookie sheet watch carefully! keep mixing till slightly browned remove right away!)
