Ingredients

How to make it

  • pre-heat oven to 325 degrees
  • line 2 large cookie sheets with parchment paper
  • spray with non stick cooking spray
  • in large mixing bowl , mix egg whites , sugar, almond and vanilla extracts.
  • Stir in toasted coconut
  • drop batter by rounded teaspoons about an inch apart
  • bake till set and golden,rotating pans between top and bottom racks
  • about 25 minutes
  • cool about 1 minute on cookie sheets, then transfer to wire racks
  • cool completley
  • melt chocolate slowly in double boiler
  • dip 1/2 of each cookie in chocolate ,then sprinkle with almonds
  • let chocolate set completley
  • (to toast coconut or almonds : preheat oven to 350 spread coconut or almond on cookie sheet watch carefully! keep mixing till slightly browned remove right away!)

    I am hoping that these are as good as the ones i travel 1500 miles for in Carmel CA. been on the look out for a good Chocolate Dipped Coconut Macaroon recipe.
