How to make it

  • remove pits from peaches. keep skin on
  • Cube peaches into large bite size chunks
  • Mix with raspberries.
  • Add a tsp or so of sugar if need to taste
  • Place in a round ceramic microwave casserole dish.
  • Mix all batter ingredients
  • with whisk until thick and smooth
  • Place fruit in dish
  • Pour on batter and smooth evenly over fruit
  • Using a modern microwave with turntable, cook high 5 minutes.
  • Batter will be loose in center. use a spoon and mix center along with any cooked batter and mix well ( this is not a cake, so mix all well )
  • Microwave in 2 minute increments on high until pudding is cooked being careful not to overcook
  • Remove from microwave and use spoon to lift and stir all contents together.
  • Using an ice cream scoop or serving spoon dish out portions on a serving plate and serve with whipped cream, ice cream, fruit syrup topping as desired.
  • When chilled this will have a texture similar to a bread pudding
