Lime Almond Cheesecake

- Crust: shopping list
- 1/4 pound lightly salted butter shopping list
- 2 cups finely ground graham crackers shopping list
- 1/4 cup sugar shopping list
- Filling: shopping list
- 2 pounds cream cheese shopping list
- 1 1/2 cups sugar shopping list
- 1 1/2 T lime juice shopping list
- Pinch of salt shopping list
- 4 large eggs shopping list
- Topping: shopping list
- 2 cups sour cream shopping list
- 1/4 cup sugar shopping list
- 1 tsp almond extract shopping list
How to make it
- Melt butter over low heat.
- Combine butter with crumbs and sugar until well blended.
- Press the mixture over the bottom and partly up the sides of a greased 10 inch springform pan.
- Combine the cream cheese and sugar.
- Beat for 2 minutes until thoroughly mixed.
- Add lime juice and salt.
- Blend thoroughly.
- Add the eggs, one at a time.
- If using mixer use lowest speed in order to keep the proper consistency of the batter.
- Mix until each egg has been mixed in well.
- Pour filling into the crust.
- Bake in preheated oven of 350 degrees for 45 minutes.
- Remove from oven and let sit for 10 minutes while you prepare the topping.
- Ingredients for the topping should be at room temperature.
- If they aren't add 5 minutes to baking time.
- Combine sour cream, sugar and almond extract in bowl.
- Spread evenly over top of the cheesecake mixture.
- Return to 350 degree oven for 10 minutes.
- Remove from oven and place in refrigerator.
