How to make it

  • Melt butter over low heat.
  • Combine butter with crumbs and sugar until well blended.
  • Press the mixture over the bottom and partly up the sides of a greased 10 inch springform pan.
  • Combine the cream cheese and sugar.
  • Beat for 2 minutes until thoroughly mixed.
  • Add lime juice and salt.
  • Blend thoroughly.
  • Add the eggs, one at a time.
  • If using mixer use lowest speed in order to keep the proper consistency of the batter.
  • Mix until each egg has been mixed in well.
  • Pour filling into the crust.
  • Bake in preheated oven of 350 degrees for 45 minutes.
  • Remove from oven and let sit for 10 minutes while you prepare the topping.
  • Ingredients for the topping should be at room temperature.
  • If they aren't add 5 minutes to baking time.
  • Combine sour cream, sugar and almond extract in bowl.
  • Spread evenly over top of the cheesecake mixture.
  • Return to 350 degree oven for 10 minutes.
  • Remove from oven and place in refrigerator.
