Ooozy Stuffed Meatloaf Recipe
My sister gave me this idea, but instead I use Velveeta. Beware, be sure to wear a bib LOL. It's SOOOOOOOOO good!!!! Good to go with mashed potatoe, green beans (or Corn on the cob), side salad.

Ingredients
  • 1 1/2 lbs lean ground beef
  • 3 slices soft white bread, torn into very tiny pieces
  • 1 cup ketcup
  • 1 tsp chili powder
  • 1/2 tbsp chili flakes
  • 1 medium onion, finely chopped
  • 2 tablespoons chopped parsley
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (1 1/4 ounce) package Lipton Onion Soup Mix (do not substitute)
  • 1-2 minced garlic clove
  • 4 slices velveeta or 1 cup shredded velveeta cheese

Directions
  1. Preheat oven to 350F.
  2. Mix ingredients (put cheese on side) thoroughly, lay out on cutting board, roll it out like you do with sugar cookies batter, at least 2" thiick, layer velveeta cheese in the center, then roll it and make sure you steal the ends good to keep the cheese in, then press into small roasting pan or loaf pan.
  3. Layer top with bacon slices, drizzle bbq sauce on top.
  4. Bake uncovered for 1 1/2 hours.
