How to make it

  • Stuffing:
  • In a bowl, place feta and cooked brown rice (cool to the touch)
  • On stove top, toast the pine nuts in butter or olive oil, until brown, and add to bowl
  • Int the same pan, cook minced shallots with butter or oil, until soft, and add to the bowl
  • Add applesauce, and apple juice
  • Salt and pepper to taste
  • Chops:
  • Preheat oven to 350
  • Lightly rub oil on the chop, and season with salt and pepper
  • Quickly sear both sides on stove top with the same pan you cooked the shallots and pine nuts in, and set aside to cool
  • With a very sharp knife, make a pocket along the side of the chop, making sure you do not go through the other side
  • Stuff chops generously
  • Bake for 35-40 minutes
  • Sauce:
  • Place all ingredients in a sauce pan, and bring to a simmer.
  • Lower heat, and allow sauce to reduce while chops cook
