Dry Chicken Curry Recipe

Ingredients
  • 1 large chicken, cleaned & cut into pieces.
  • 3-4 large onions, chopped
  • 2.5cm pieve young ginger, sliced
  • 2-3 tbsp chilli powder
  • 2cm piece cinnamon stick
  • 2 stalks spring onions, chopped
  • 5 tbsp oil
  • Salt to taste
  • Juice of a lime (or can substitute with vinegar)

Directions
  1. Heat oil in a wok over high heat.
  2. Add cinnamon stick, sliced ginger & sliced onion & fry till golden brown.
  3. Add chicken pieces & salt.
  4. Add chilli powder & fry over high heat, stirring occasionally. Cover & simmer over medium heat untill the liquid dries & chicken is tender.
  5. Add lime juice or vinegar & spring onions. Stir quickly before dishing out.
