How to make it

  • Preheat oven to 350'
  • Combine banana,1/2 c brown sugar,5 TB butter and 3 TB cognac in nonstick skillet. Cover over med heat until mixture begind to bubble. Remove from heat;cool.
  • Place banana mixture in large bowl.add yogurt,remaining 1/2 c brown sugar and eggs. Beat with mixer at med. speed.
  • Weigh or lightly spoon flour into dry measuring cups;level with knife.
  • Combine flour and next 5 ingredients in small bowl. Add flour mixture to banan mixture;beat just till blended. Pour batter into 9x5" loaf pan coated with cooking spray.
  • Bake for 1 hour or till pick near center comes out clean. Cool 10 mins on wire rack. Remove bread from pan,place on rack.
  • Combine remaining 1 TB melted buttwer,remaining 1TB cognac and powdered sugar;stir till well blended. Drizzle over warm bread.

    I can't fairly critique this recipe, never having the real bananas foster. I condescend to her tastebuds.

    That sounds really yummy Pat! The yogurt addition is neat and I like the glaze idea too! I'm sure I could skip the Flax seed and it wouldn't be huge right?
