This is a great twist for leftover chicken and it is delicious as a salad, snack, eggroll, wonton, or pierogi and even a sandwich spread.

Ingredients
  • 2 Skinless, boneless cooked chicken breasts diced
  • 1 garlic clove minced
  • 1 tbl sesame oil
  • 1 tbl cooking oil
  • 2 cups veggies, shredded carrots, celery, spinach, chard, (whatever is handy) chopped fine
  • 1/2 c chopped fine scallions
  • 1/2 c chopped water chestnuts
  • 1/4 cup soaked mung beans or mung sprouts
  • 2 tbl sake or broth
  • 2 tbl soy or tamari sauce
  • 1 tsp grated ginger
  • 1 tsp sugar
  • 1/4 tsp salt
  • 2 tbl mayonnaise

Directions
  1. Combine chicken, garlic, soy, ginger, sugar and salt in blender, puree
  2. Saute this mixture in a little oil until fragrant and raw seasonings are cooked
  3. Add sake or broth and rest of the vegetables
  4. Cook until veggies are done but crisp
  5. Remove from fire and add sesame oil, mix well add a little extra sake or broth if mixture is too dry
  6. Allow this mixture to cool to room temperature
  7. Add mayo
  8. Refrigerate mixture for use as a salad or fill eggrolls as I did and deep fry.
  9. This is so good cooled down with the mayo that I almost did not have enough left to fill the eggrolls !!!!

This sounds great.


I was looking for a nice chicken filling for some wonton basket appetizers. I'll be taking to a party at the end of February. I believe this would work really well. Thanks for the ideas.
