Chicken Filling for Salad or Eggroll

- 2 Skinless, boneless cooked chicken breasts diced shopping list
- 1 garlic clove minced shopping list
- 1 tbl sesame oil shopping list
- 1 tbl cooking oil shopping list
- 2 cups veggies, shredded carrots, celery, spinach, chard, (whatever is handy) chopped fine shopping list
- 1/2 c chopped fine scallions shopping list
- 1/2 c chopped water chestnuts shopping list
- 1/4 cup soaked mung beans or mung sprouts shopping list
- 2 tbl sake or broth shopping list
- 2 tbl soy or tamari sauce shopping list
- 1 tsp grated ginger shopping list
- 1 tsp sugar shopping list
- 1/4 tsp salt shopping list
- 2 tbl mayonnaise shopping list
How to make it
- Combine chicken, garlic, soy, ginger, sugar and salt in blender, puree
- Saute this mixture in a little oil until fragrant and raw seasonings are cooked
- Add sake or broth and rest of the vegetables
- Cook until veggies are done but crisp
- Remove from fire and add sesame oil, mix well add a little extra sake or broth if mixture is too dry
- Allow this mixture to cool to room temperature
- Add mayo
- Refrigerate mixture for use as a salad or fill eggrolls as I did and deep fry.
- This is so good cooled down with the mayo that I almost did not have enough left to fill the eggrolls !!!!

I was looking for a nice chicken filling for some wonton basket appetizers. I'll be taking to a party at the end of February. I believe this would work really well. Thanks for the ideas.
