Greek-inspired Chicken & Pasta Salad

- 4 cooked boneless, skinless chicken breasts (or combination of boneless, skinless breasts & thighs), shredded or chopped into bite size pieces shopping list
- (I poach the chicken for this recipe, but you can use your preferred method or even use a rotisserie chicken (skin removed & meat shredded.) shopping list
- 12 oz. ditalini pasta (or any small tubular pasta) shopping list
- 1 cup Greek yogurt shopping list
- ½ cup Miracle Whip or mayonnaise shopping list
- 2 tablespoons apple cider vinegar shopping list
- 1 heavy tablespoon Dijon mustard shopping list
- 1 teaspoon dried dill weed shopping list
- 2-4 tablespoons fresh chopped chives (I use a lot of chives in this, but use the amount that suits your taste) shopping list
- ½ teaspoon granulated onion shopping list
- ½ teaspoon granulated garlic shopping list
- ½ teaspoon Greek seasoning (I use Cavender’s) shopping list
- 1 cucumber – peeled, seeded & finely chopped shopping list
- **Optional – 2 stalks celery, chopped (for cold salad version); 1 medium eggplant, chopped and sauteed (for warm version); 10-12 small cremini mushrooms, quartered and sautéed (this works in either warm or cold version) shopping list
How to make it
- Cook pasta in boiling, salted water until it is al dente and drain.
- If you are planning this as a cold salad, rinse the pasta in cold water; if you are planning a warm dish, no need to rinse.
- While the pasta is cooking, whisk together the Greek yogurt, Miracle Whip (or mayonnaise), vinegar, Dijon mustard, dill, chives, granulated onion, granulated garlic and Greek seasoning.
- If you feel the mixture is too thick for your taste, whisk in water, a little at a time, until you achieve your desired consistency.
- Add the cooked chicken (shredded or chopped), and any optional ingredients** you may be using, to this mixture and gently stir to combine.
- Add the pasta to the chicken salad mixture and toss.
- This can be served on a bed of mixed greens or as a stand-alone main dish.
