How to make it

  • Slice the flat iron steak into sandwich appropriate pieces.
  • Cook the sliced steak to medium-rare doneness (I use my indoor grill pan to cook the steak).
  • Tent loosely with foil to keep warm while you make the sauce.**
  • In a saucepan, begin to melt the butter over medium-low heat.
  • Add the garlic to the pan when the butter is about half melted and cook while the butter continues to melt.
  • When the butter has melted, add the flour and cook & stir until smooth, about 3-4 minutes.
  • Add a small amount of the milk and whisk continuously until very smooth.
  • Add the rest of the milk, again whisking continuously to maintain consistency.
  • Continue to cook the sauce, stirring frequently, about 5 minutes.
  • Add the provolone cheese to the sauce (if you are using slices, just tear them up and toss them in).
  • Cook, stirring frequently, until cheese melts completely.
  • *If you prefer a thinner sauce, add more milk to thin out the consistency. Do this after the cheese melts and only add a tablespoon or so at a time, stirring after adding, until you achieve the desired consistency.
  • Season with salt & pepper to taste.
  • Assemble sandwiches on your preferred roll or bun using the flat iron steak, provolone sauce and any sandwich topping you want to add.
