Sausage Cake Recipe
Sounds weird, but it is really delicious. Stays moist and people are always surprised to hear the ingredients. Out of G-ma Roberts files from Marathon Florida, circa 1962.

Ingredients
  • 1/2 lb. mild bulk sausage
  • 1 1/4 cups of sugar
  • 2 eggs
  • 2 1/2 cups of flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of allspice
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of cloves
  • 1 cup milk
  • 1 cup of shredded granny smith apples
  • 1/2 cup of chopped pecans
  • 1/2 pint of heavy cream
  • 2 tablespoons of sugar
  • sprinkle of cinnamon

Directions
  1. Cream the sausage and the sugar. (The sausage is your "butter").
  2. Add eggs and beat well for five minutes.
  3. Sift dry ingredients and add alternately with the milk.
  4. Fold in apples and pecans.
  5. Pour into 10 tube pan that is well greased and floured.
  6. Bake at 350 degrees for 50-55 minutes.
  7. Cool.
  8. Serve with a fresh whipped cream, beaten with a little sugar and a dash of cinnamon.

My husband loves minced meat pie - this sounds similar to that same concept of fruits, spices and minced meat...I will have to try this for him!


This is the second sausage cake recipe I have tried. This is excellent. We are going to use this recipe as stuffing for Thanksgiving.
