Frozen Strawberry Daiquiri Recipe
Another frozen drink, great for summertime entertaining. I like that I can make it ahead and have it ready to serve when company arrives.

Ingredients
  • 1 (12 ounce) can frozen pink lemonade concentrate
  • 12 ounces water
  • 6 ounces lemon-lime soda
  • 6 ounces white rum
  • 1 cup powdered sugar
  • 1 pint fresh or frozen strawberries (no sugar added)
  • additional lemon-lime soda for serving
  • NOTE: this can easily be made non-alcoholic by eliminating the rum and changing the soda measurement to 12 ounces.

Directions
  1. Mix all ingredients in blender (1/2 at a time) until slushy.
  2. Freeze at least 8 hours, stirring a couple times.
  3. Before serving, stir mixture well (alcohol settles to the bottom).
  4. Fill glasses about ½ full of frozen mix and add lemon-lime soda almost to the top; stir and serve.
  5. Variations:
  6. Strawberry Coconut Daiquiri: Substitute Malibu Coconut Rum for white rum.
  7. Strawberry Pina Coladas: Substitute Malibu Coconut Rum for white rum; to serve, use pineapple juice instead of lemon-lime soda.
