How to make it

  • In a bowl, combine the flour, Parmesan cheese, salt, baking powder and baking soda.
  • In another bowl, beat the eggs, buttermilk, sugar and butter.
  • Stir into the dry ingredients, just until moistened.
  • Fold in zucchini and onion.
  • Pour into a greased & floured 9x5x3 loaf pan.
  • Bake in a 350 oven for 1 hour or until a toothpick inserted in center comes out clean.
  • Cool for 10-15 minutes before removing from pan.

    oh yum! love it sweet & I've never had savory.. do you think one (average medium) zucchini would equal one cup shredded?

    Gracious...
    I would have to work-out twice as hard at the gym if I made this.
    Mom knew best,I would'nt change a thing,I like everything about it.
