How to make it

  • Preheat oven to 350
  • Arrange phyllo shells on large,parchment -lined baking sheet.
  • Divide apple among the shells. Whisk eggs,Dijon,salt pepper,and nutmeg in large measuring cup.
  • Pour egg mixture over apple (do not over fill)
  • Place one piece of brie in each shell Bake till egg is set,Brie melted and phyllo starting to brown,about 15 mins. Let cool slightly before serving.

    I think you forgot a very key ingredient - milk or cream - to make an actual custard for the brie and cheese to float in.

    I ignored my gut and followed the recipe, and only had enough liquid for 1/3 of the phyllo cups. When I baked those, they turned out much more like brie and apple scrambled eggs. Not at all what I was hoping for, and a huge disappointment.

    For the rest, I made a more traditional quiche custard -- so the above recipe, but I added 1 cup of milk. I was far more pleased with the results; a light and fluffy custard with bits of apple surrounded by melted brie. The mustard (I used a honey dijon) adds just a hint of depth to the flavour of the custard. These ones, I am prepared to serve to others.
