Ingredients
  • 175g unsalted butter
  • 150g vanilla castor sugar
  • pinch of salt
  • zest of one lemon
  • 2 eggs
  • 4-5 tbsp creme fraiche
  • 150g self raising flour
  • 85g ground almonds
  • Topping:
  • 2 egg whites
  • 125g vanilla castor sugar
  • 85g ground almonds

Directions
  1. Cream butter and sugar together til light and fluffy. add salt , lemon zest and eggs one by one, beating as you go..fold in 4 Tbsp creme fraiche, sifted flour and almonds, if the mixture is a little heavy add remaining creme fraiche....bake 30mins in preheated oven at 180.c
  2. Topping:
  3. five minutes before removing cake, whisk egg whites stiffly, incorporating half the sugar and whisk until stiff. Fold in the almonds and the remaining sugar lightly and quickly.
  4. Remove cake from oven and spread the macaroon mixture on top...return cake to oven and bake for 20mins until biscuit coloured and crisp to touch..
  5. cool 10 mins, turn out and serve warm with creme fraich.
