How to make it

  • Cream butter and sugar together til light and fluffy. add salt , lemon zest and eggs one by one, beating as you go..fold in 4 Tbsp creme fraiche, sifted flour and almonds, if the mixture is a little heavy add remaining creme fraiche....bake 30mins in preheated oven at 180.c
  • Topping:
  • five minutes before removing cake, whisk egg whites stiffly, incorporating half the sugar and whisk until stiff. Fold in the almonds and the remaining sugar lightly and quickly.
  • Remove cake from oven and spread the macaroon mixture on top...return cake to oven and bake for 20mins until biscuit coloured and crisp to touch..
  • cool 10 mins, turn out and serve warm with creme fraich.
