Honey Mustard Tilapia With Spinach

- 2 – 3oz tilapia fillets shopping list
- approx. 1 cup honey mustard (honey Dijon) salad dressing, I used Newman’s Own Lite honey mustard shopping list
- 1 tablespoon butter shopping list
- 1 tablespoon garlic olive oil shopping list
- fine sea salt shopping list
- pepper shopping list
- onion powder (optional) shopping list
- 2 cups fresh baby spinach shopping list
How to make it
- Put the fillets in a shallow dish and pour enough dressing over to coat both sides completely. Let sit in the dressing 5 minutes or so.
- Heat the butter and oil together in a good size skillet over medium heat.
- Add the fish and cook a few minutes on both sides.
- When the fish is almost done, add the spinach to the skillet along with the remaining salad dressing.
- After the spinach has started to cook down, begin to gently stir the spinach around and break up the fish to combine it with the spinach.
- Season the whole thing to taste with salt, pepper and onion powder.
- Once spinach is wilted down, remove the pan from the heat and eat it!
- I had this with mashed potatoes, but it would also be great over rice or pasta too.
