How to make it

  • Put the fillets in a shallow dish and pour enough dressing over to coat both sides completely. Let sit in the dressing 5 minutes or so.
  • Heat the butter and oil together in a good size skillet over medium heat.
  • Add the fish and cook a few minutes on both sides.
  • When the fish is almost done, add the spinach to the skillet along with the remaining salad dressing.
  • After the spinach has started to cook down, begin to gently stir the spinach around and break up the fish to combine it with the spinach.
  • Season the whole thing to taste with salt, pepper and onion powder.
  • Once spinach is wilted down, remove the pan from the heat and eat it!
  • I had this with mashed potatoes, but it would also be great over rice or pasta too.
