I'm trying this recipe by hand. Mixed all the dry ingredients,save the raisins. Elevated the wet ingredients to 125*F before mixing into the dry ingredients.
Added the raisins a handful at a time after the dough started building up some gluten.
On its first rise now. Did not use all 3 cups flour. Think about a quarter to a third cup left over.

Turned out fairly well. Used active dry yeast. Saved the last third of the raisins and an additional teaspoon of cinnamon to sprinkle on the dough after punch down and roll out. The pictures tell the story.
Baked at 375*F for 35 minutes. Probably can bake at 350*F.

Not quite as good as you can buy in the store but still very good. Slather on some butter or homemade jam.
