Ingredients

How to make it

  • Warm oil in a large saucepan over moderate heat. Add Onion. Cover and cook for 5 min.
  • Add Potatoes and Leeks. Stir well and cook for 10 min.
  • Pour in liquid and bring to the boil for 5 min, stirring, then simmer until Vegetables are tender. Allow to cool slightly.
  • Liquidize in blender or food processor. Return to pot and stir in cream and seasonings.
  • Reheat gently and garnish with Parsley.
  • Serve with home made Crusty Bread.

    I was checking out recipes tonight..had some leftover leeks. I love potato, leek, and bacon soup, and saw your recipe. I am always looking for a new twist to try on my recipes! Love the nutmeg idea!
    Anyway, I saw the comment concerning your measurements and was a bit taken back. That person does not appear to be currently, or was ever, active on this site, so I could not address them, which I would have enjoyed doing. Nonetheless, people like that need to understand that this site, like the Internet in general,is an International one, and does not cater to the US standards of measurement. Additionally, all one needs to do is look on the container for the metric conversion. It is quite simple, and in some cases, especially when making more or less of a recipe, it is easier.
    That being said, I am done venting, and looking forward to trying the addition of nutmeg in my potato, bacon, and leek soup. I bet it will be fantastic. Thanks for the post. Looking forward to checking out your other recipes.
