Spicy Sicilian Chicken

- 2 red onions,cut in wedges shopping list
- 1/3 c pitted oi-cured black olives shopping list
- 8-12 dried chilies,such as cayenne or arbol,broken in half shopping list
- 6 bay leaves shopping list
- 1 orange,halved shopping list
- 8 skin-on,bone-in chicken thighs (about 2 lbs) shopping list
- 3 TB extra virgin olive oil shopping list
- kosher salt shopping list
How to make it
- Position rack in upper third of oven and preheat to 500'
- Put onions,olives,chilies and bay leaves on rimmed baking sheet. Cut 1 orange into wedges. Add to baking sheet.
- Evenly space chicken thighs,skin-side up,on baking shee on top of other ingredients. Drizzle with olive oil and squeeze the juice from remaining orange half on top. Season with salt.
- Roast until chicken is cooked through and the sjkin is crisp and golden,30-35 mins. Discard bay leaves. Serve chicken with the onions,olives, oranges and pan juices.
