Baked Potatoes With Olives And Feta

- 4 small russet potatoes shopping list
- 1/3 c Greek yogurt shopping list
- 1/2 c feta cheese shopping list
- 4 tsp. chopped pitted kalamata olives shopping list
How to make it
- Preheat oven to 450'
- With a fork prick potatoes (2lbs total) in several places.
- Place potatoes on a plate and microwave till tenderwhen pierced with a knife,7 to 10 mins.
- Transfer to rimmed baking sheet and bake till skin is crisp,about 10 mins.
- Halve potatoes. Dividing evenly,top halves with yogurt,feta and olives. Season with coarse salt and ground pepper. Sprinkle with fresh chopped chives.
