Maple Crunch Muffins

- 2 c flour shopping list
- 1 c whole wheat flour shopping list
- 1/2 c granola with almonds shopping list
- 1 TB baking powder shopping list
- 1 tsp salt shopping list
- 1 c milk shopping list
- 1 c pure maple syrup shopping list
- 1/2 c canola oil shopping list
- 2 eggs,lightly beaten shopping list
- 1 recipe Maple frosting below(optional) shopping list
- Granola with almonds shopping list
How to make it
- Preheat oven to 375'
- Line 18 3-1/2" muffin cps with paper bake cups.
- Combine flours,granola,baking powder and salt.Combine milk,syrup,oil,and eggs;add t5o flour mixture. Stir till moistened(batter will be lumpy). Spoon into muffin cups,filling each 2/3 full.
- Bake 15 mins. or till toothpick comes out clean. Cool in muffin cups on wire rack 5 mins.. Remove from cups.
- Spoon Maple Frosting atop muffins;sprinkle with additional granola
- Maple Frosting: In bowl,beat 2 oz softened cream cheese 30 seconds. Add 2 TBS. powdered sugar and 1 TB maple syrup,beat till smooth.
