Panko Crusted Chicken Schnitzel

- 3 boneless skinless chicken breasts, beaten thin shopping list
- salt and pepper shopping list
- 2 cups panko breadcrumbs shopping list
- 1 cup of cornflour shopping list
- 3 eggs beaten shopping list
- 1/4 cup canola oil shopping list
- 6 tablespoons butter shopping list
How to make it
- 1. Take the chicken breasts (already beaten and thin) and place in cornstarch (mixed in salt and pepper) make sure covered with cornstarch.
- 2. Then place in the egg .
- 3. Then place in the panko crumbs(with parsley added) and make sure fully coated.
- 4. Heat the canola oil in a skillet on high and when hot add the chicken cutlets and get them nice and brown and then lower temperature and cook the chicken whilst turning to make sure they are evenly brown and then let cook for a bit longer until chicken is fully cooked in the middle.
- 5. Before plateing I let them sit on paper towel just to remove any excess oil, if any.
