How to make it

  • Peel potatoes and grate by hand into a bowl of cold water. Soak potatoes in cold water for 2-3 minutes, then drain in a colander. Spread potato and onion on a kitchen towel and twist like a jelly-roll. Move potato and onion mixture into a bowl, add salt and egg. Heat 1/4 cup of oil in a nonstick pan over high heat. Spoon 2 tablespoons potato mixture per latke into pan and spread with a fork. Reduce heat and cook until brown. Turn latkes over and cook until undersides are browned. Transfer to paper towels to drain and season with salt. Add more oil to pan as needed. Keep latkes warm on a wire rack set in a shallow baking pan in oven.
