How to make it

  • Preheat an oven to 350 degrees .
  • Mix the cornstarch and reserved pineapple juice together in a saucepan. When smooth, add the soy sauce, sugar, and black pepper. After the sugar is completely dissolved, add the onion, garlic, and ginger. Bring the mixture to a boil and cook until the sauce thickens, about 5 minutes. Add the pineapple chunks and simmer while preparing the chicken.
  • Prepare a baking dish by coating with cooking spray; arrange the chicken in the dish; season with salt and pepper. Evenly pour the teriyaki sauce and pineapple over the chicken.
  • Bake for 45 minutes, basting the chicken with teriyaki sauce. Serve the chicken and sauce over fluffy white rice.
