Pineapple Chicken Teriyaki

- 1/2 cup soy sauce shopping list
- 1/2 cup white sugar shopping list
- 1/2 teaspoon black pepper shopping list
- 1 tablespoon cornstarch shopping list
- 1 (20 ounce) can pineapple chunks in juice, drained, juice reserved shopping list
- 1 onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1 (2 inch) piece fresh ginger root, peeled and chopped (I like to freeze and grate the ginger) shopping list
- 4 boneless, skinless chicken breasts shopping list
- salt and ground black pepper to taste shopping list
How to make it
- Preheat an oven to 350 degrees .
- Mix the cornstarch and reserved pineapple juice together in a saucepan. When smooth, add the soy sauce, sugar, and black pepper. After the sugar is completely dissolved, add the onion, garlic, and ginger. Bring the mixture to a boil and cook until the sauce thickens, about 5 minutes. Add the pineapple chunks and simmer while preparing the chicken.
- Prepare a baking dish by coating with cooking spray; arrange the chicken in the dish; season with salt and pepper. Evenly pour the teriyaki sauce and pineapple over the chicken.
- Bake for 45 minutes, basting the chicken with teriyaki sauce. Serve the chicken and sauce over fluffy white rice.
