Seared Shrimp With Linguine

- 6-8 jumbo shrimp,shelled,deveined and butterflied shopping list
- fresh thyme,dill,tarragon or parsley(whatever you have) shopping list
- 2 cloves garlic,minced shopping list
- 1 med shallot,minced shopping list
- 1/2 c white wine shopping list
- 2 small to med. tomatoes,peeled and chopped shopping list
- red pepper flakes shopping list
- 1/2 lb linguine,cooked shopping list
- olive oil, shopping list
- salt shopping list
- pepper shopping list
- cold butter shopping list
How to make it
- Sear shrimp in oil till just starting to turn pink;remove to plate
- Saute shallots and garlic briefly
- Add wine,herbs,red pepper and tomato
- Season with salt and pepper to taste and simmer a couple of mins.
- Add shrimp to sauce for about 3 mins or more depending on size;remove to plate
- Swirl in a pat of cold butter to finish sauce
- Add cooked linguine to sauce and heat briefly
- Divide linguine among 2 plates in a nice mound in middle.
- Arrange shrimp around edge of plate;pour remaining sauce over all.
