Chicken Corn Chowder

- 2-3 chicken breasts or 1 lb chicken tenderloins shopping list
- chicken bouillon (I like 'Better than Bouillon' paste) shopping list
- 1/2 cup butter (or one stick butter) shopping list
- 2-3 tbsp olive oil shopping list
- 1/2 yellow onion (chopped) shopping list
- 2 Tbsp flour shopping list
- 2 cans yellow sweet corn (or 3 ears boiled and cut from cob) shopping list
- 1 can diced green chilies shopping list
- 1 can diced new potatoes (or 5-6 new potatoes boiled and diced) shopping list
- 1 pint half and half shopping list
- milk shopping list
- Fajita seasoning shopping list
- paprika shopping list
- cayenne pepper or Tabasco shopping list
- salt to taste shopping list
How to make it
- Start to boil in a separate pot: chicken and bouillon
- In a stew pot melt butter @ medium temp with olive oil
- Add onions and caramelize
- Stir in flour
- Add corn, chilies and potatoes. Reduce heat to medium-low.
- Season with fajita seasoning, paprika, and cayenne (or Tabasco) and salt if needed. Sadly, I never measure my seasonings, I just throw it in and taste as I go along. One warning though: the more pepper, the more spicy.
- Pour in Half and Half, let simmer for 10 minutes
- Pull chicken from other pot and shred into bite size pieces. Take 1 1/2 cups broth and add to soup.
- If soup is too thick, you may add milk to dilute.
- Throw in chicken and stir until combined.
- Chow down!

i like it I am a big chowder/soup person in the winter, and I have left over turkey so this will be a good way to finish it up!
