Ingredients

How to make it

  • cook rice in the biggest pot you have
  • turn heat up to almost medium flame if you have an electric stove, i can't help you. those appliances have always been alien and weird to me.
  • brown the sausage right on top of it
  • throw in the tomatoes
  • add the sliced peppers, diced celery, and chopped onions (i like to reserve some of them to put in closer to the end for texture) See Photo
  • add okra and corn
  • add salt, basil, and hot sauce
  • add the UNCOOKED, DE VEINED, SHELLED shrimp and turn off heat
  • allow to sit, covered, for 10-12 minutes
  • enjoy!

    This looks like a great dish to try but I can't get Okra here in Spain for love nor money. Is there a substitute, or do you think it would work without the okra?

    this looks so interesting! I lived in New Orleans for a time and loved it there but the Appalachian Mountains are my true "home." This recipe looks like it combines two of my favorite places into a tasty dish! =)

    Looks good, but I think starting with a roux(1 cup oil/butter/margarine cooked on medium until dark chocolate brown) and cooking the onions, celery, and peppers at the start(after the roux has come to the colour you prefer your roux) would make it that much better. Also, if you want to get the onions to caramelize properly you have to cook them before you add anything with water celery being among the big offenders of this. The rice will cook in any liquid too as long as you cook it long enough, course by now the cooking time is increased a fair bit. Anyhow, hopefully this'll make your dish even better, and I feel like a bit of thyme would be a nice addition to go with the basil, but then there's never enough time in the world.
