- Step 1 shopping list
- 2 tbsp. oil shopping list
- 1 lb. fresh pork in 1” cubes shopping list
- 4 cups chopped onion shopping list
- Step II shopping list
- 1 cups chopped ham shopping list
- 1 tbsp. minced garlic shopping list
- 1 cup chopped bell pepper (use mixed green, red orange for color) shopping list
- 1/2 cup green onion shopping list
- 1/4 cup minced parsley shopping list
- 3/8 tsp. dried thyme shopping list
- 2 crushed bay leaves shopping list
- 1/4 tsp. ground cloves shopping list
- Step III shopping list
- 1 lb. smoked sausage (Use Andouille, Polish/Kielbasa or Regular sausage, not turkey or beef sausage) cut into 1” pieces shopping list
- 3 3/4 c. beef broth shopping list
- 2 cups long grain rice shopping list
- 3 tsp. salt shopping list
- 3/8 tsp. black pepper shopping list
- 1/8 tsp. red (cayenne) pepper shopping list
- 3/4 tsp. chili powder shopping list
How to make it
- In a Dutch Oven or other heavy cooking pot, brown the pork in oil; add onions and saute’ until golden.
- Add sausage, beef broth, rice, salt, black & red pepper & chili powder and mix well.
- Cover pot, bring to boil, turn heat low and cook for 45 minutes stirring from time to time.
- Serve with fresh, hot cornbread.
